Pumpkin Roll with Cream Cheese Filling

INGREDIENTS:

3 Eggs
1 cup Sugar
2/3 cup Pumpkin
1 teaspoon Lemon juice
3/4 cup All-purpose flour
1 teaspoon Baking powder
2 teaspoons Cinnamon
1 teaspoon Ginger
1/2 teaspoon Nutmeg
1/2 teaspoon Salt

Filling:
8 ounces Cream cheese -- softened
4 tablespoons Butter -- or margarine
1 cup Powdered sugar
1/2 teaspoon VanillaPREPARATION:

in large bowl, combine eggs and sugar, beating well. Add pumpkin and lemon juice, mixing until blended.

In separate bowl, combine flour, baking powder, spices and salt. Add to egg mixture, mixing well.

Spread batter into greased and waxed-paper lined 10-by-15-inch jelly-roll pan.

Bake at 350 ° for 15 minutes. Remove from oven. Cool for 15 minutes. Place cake on clean tea towel sprinkled liberally with powdered sugar. Cool 10 minutes longer. From 10- inch side, roll cake up in towel. Set aside.

While cake is cooling in towel, prepare filling. Beat together cream cheese and butter; stir in powdered sugar and vanilla and blend until smooth.

Unroll cake. Evenly spread filling over cake. Roll up cake (without the towel). Wrap in plastic wrap. Cover and chill at least 1 hour. Slice before serving. Keep leftover slices refrigerated. This pumpkin roll freezes well.

You can freeze the finished product for later consumption

Green Bean Casserole

INGREDIENTS:

1 can (10 3/4 ounces) condensed cream of mushroom soup
4 cups cooked green beans
1/8 teaspoon pepper
1/2 cup milk
1 1/3 cups French fried onionsPREPARATION:

Mix soup, milk and pepper in a 1 1/2-quart casserole dish. Stir in beans and 2/3 cup of the fried onions. Bake for about 25 minutes at 350 degrees F. Top with the remaining 2/3 cup fried onions and bake about 5 more minutes, until onions are lightly browned.
Serves 6.

Garlic Cheese Biscuits

(This recipe is similar to the Red Lobster biscuits)

INGREDIENTS:

2 cups Bisquick
2/3 cup milk
1/2 cup shredded cheddar cheese
1/4 cup melted butter
1/4 teaspoon garlic salt
generous dash Italian seasoning (I like to use the powdered ranch packets instead to dust over the top)PREPARATION:

Combine first 3 ingredients. Dough will be sticky. Spoon into 12 well-greased muffin tins. Do not use paper liners. Combine last 3 ingredients; brush evenly over the batter. Bake for about 10-15 minutes at 450° until nicely browned.

Stuffed Turkey Breast

INGREDIENTS:


1 (4-5 lb) Pkg Turkey Breast Half
1 (6oz) Stove Top Stuffing Mix for Turkey - Prepared according to instructionsPREPARATION:

Preheat oer to 325 degrees. Rinse turkey, pat dry. With knife, loosen lining under the skin, leaving all but one edge attached (make a pocket).

Spoon stuffing into the pocket under the loosened skin.

Secure opening with poultry skewers or toothpicks and place, skin side up, in a shallow roasting pan.

Roast 1 1/2 hours.

Baste with pan drippings and cover loosely with foil.

Roast an additional 45 - 60 minutes.

Let stand 10 minutes before serving.

Basic Turkey Gravy

INGREDIENTS:

pan drippings
flour
waterPREPARATION:

Pour the turkey or chicken pan drippings into a 2 cup measuring cup and skim the fat off. Put about 1/4 cup of the fat into a saucepan and stir in 1/4 cup of flour (all purpose). Add enough water to the drippings (throw the rest of the fat away) to make 2 cups of liquid.

Pour the 2 cups of liquid into the flour/fat mixture. Cook, stirring, until thickened and bubbling. Cook for about 1 minute, stirring. Add salt and pepper to taste.

This recipe makes about 2 cups of gravy.

If you'd like some more flavor, you can also toss in a low sodium chicken boullion.

Ranch Mashed Potatoes
(make the night before)

INGREDIENTS:


2 lbs (4 cups) cleaned potatoes, cut into 1 inch pieces - skins optional
1/3 cup water
1/2 tsp salt
1 cup milk
1/3 cup sour cream
1 1/2 tsp dry ranch salad dressing mix
2 tbsp butter or margarinePREPARATION:

Compbine potatoes, water and salt in a 2 quart saucepan. Cook over high heat until water comes to a boil. Reduce heat to low. Cover and cook until potatoes are nice and tender with a fork (Approx 20 minutes), Drain

Mash potatoes with a potato masher or electric mixer, gradulally adding 2/3 cup milk, sour cream and ranch during the process (assistants are great for this part)

Spread potatoes evenly into 1 1/2 quart casserole. Pour remaining link over potatoes (DO NOT MIX). Dot with butter (cut up butter and place in various areas) Cover and refridgerate 4 hours or overnight

Heat oven to 400 degrees. Bake uncovered for 20 minutes, stir. Continue for 20 to 30 minutes or until heated through.

To serve, you can top with cheddar cheese and chives :) If you'd like to serve right away, mix in the butter, but don't top with the extra milk.

*Red potatoes will make a creamier batch and require less milk*

Glazed Carrots

INGREDIENTS:

4 medium carrots
2 tablespoons butter
2 tablespoons sugar (or honey)
mint or thyme, optional (If you use thyme, I recommend approx 1/4 mustard power)PREPARATION:

Wash and scrape carrots. Cook in boiling salted water until tender. Drain. Cut in slices. Melt butter. Add sugar. Add carrots. Cook until slightly browned and glazed. Add a teaspoon of chopped fresh mint leaves or thyme to the butter and sugar mixture, if desired.

Marinated Mushrooms

INGREDIENTS:


1 lb button mushrooms
1/3 cup olive oil
3 tsp red wine vinegar
1/4 cup scallions
1 tsp garlic
1 tsp dijon mustard
1 tsp salt
1/4 tsp black pepper
3 tsp dried parsleyPREPARATION:

Pack mushrooms into a sterile jar (or a large freezer bag works too, just squeese the air out as best as possible when all ingredients are in).

Stir together the rest of the ingredients and pour over the mushrooms. Seal container tightly and chill for several hours, agitating the container frequently to mix up the ingredients.

Serve slightly chilled or at room temperature.

Sangria!

INGREDIENTS:

1 lemon
1 lime
1 orange
1 1/2 cups rum
1/2 cup white sugar
1 (750 ml) bottle dry red wine (ask the liquor store employees for assistance if you're not sure about this one!)
1 cup orange juicePREPARATION:

Have the fuit, rum, wine and orange juice well chilled. Slife the fruits into thin rounds and place in a large pitcher (glass works best)

Pour the rum and sugar in. Chill for about 2 hours to develop the flavors

When ready to serve, crush the fuits gently with a wooden spoon and stin in the wine and orange juice. Adjust sweetness to taste.

Sweet Corn Pudding :)

INGREDIENTS:

1 can whole kernel corn, drained
2 eggs, beaten slightly
1 cup milk
1 teaspoon baking powder
2 tablespoons flour
Topping, belowTOPPING

1/2 cup water
1/2 cup margarine
2 tablespoons flour
1/2 cup sugarPREPARATION:

Mix all ingredients together (mix topping separate) and place in a 1 1/2 quart baking dish. Bake in a 325° oven for 45 minutes, pour topping over and serve.

Marinated Tomato and Cucumber Salad

INGREDIENTS:

4 lg tomatoes, cut into bite sized wedges
2 cucumbers, peeled and cubed
1 lg purple onion, pealed and sliced
1/2 c olive oil
1/4 c apple cider vinegar
1 tbsp sugar
1/2 tsp salt
1/8 oregano
Dash of parsley and basil (optional)PREPARATION:

Put veggies in a large bowl.

Combine all the othe ingredients and mix well with a wire whisk (until sugar is dissolved) and pour over the veggies

Let Marinate in the fridge for about 1 hour before serving for the best flavor

*You can add black olives to this too*

Honey Glazed Ham

INGREDIENTS:

1 (10 lb) Fully cooked bone in ham
1 1/4 cup packed dark brown sugar
1 large can pineapple rings (reserve 1/3 cup of the juice)
1/3 cup honey
1/3 cup large orange, juiced and zested
2 tbsp Dijon mustard
1/4 tsp ground clovesPREPARATION:

Preheat oven to 325 degrees.

Place ham in a roasting pan

In a small saucepan, combine the brown sugar, 1/3 cup pineapple juice, honey, orange juice, orange zest, dijon mustard and ground cloves. Bring to a boil. Reduce heat and let simmer 5 - 10 minutes. Set aside.

Bake ham in preheated oven uncovered for 2 hour. Remove ham from oven and brush with glaze - top with pineapple rings. Bake for an additional 30 to 45 minutes, brushing ham and pineapple rings with glaze every 10 minutes.

Allow to rest 10 minutes before serving.

Crockpot Roast Beef

INGREDIENTS:

4 lb. boneless beef top round roast
1 tsp. Beau Monde Spice Mix (see below)
1/2 tsp. lemon pepper
2 Tbsp. olive oil
2 onions, chopped
4 cloves garlic, minced
1 cup sliced celery
16 oz. pkg. baby carrots
3 potatoes, quartered
1 cup dry red wine or beef broth
1 tsp. sugar
15 oz. can tomato sauce
2 Tbsp. tomato pastePREPARATION:

Sprinkle roast with Beau Monde seasoning and lemon pepper. In large Dutch oven or heavy skillet, brown roast on all sides in hot oil over medium heat; drain well. Place onions, celery, garlic, carrots, and potatoes in 3-4 quart slow cooker and place roast on top.

In medium bowl, mix together wine or broth, sugar, tomato sauce, and tomato paste and pour it over the roast. Cover crockpot and cook on LOW for 8-10 hours, until vegetables are tender and roast is cooked. 8 servings


>>Beau Monde Spice Mix (just in case you don't find it in the store)

INGREDIENTS:

1 Tbsp. ground cloves
1 tsp. ground cinnamon
1 Tbsp. salt
1 Tbsp. ground bay leaf
1 Tbsp. ground allspice
2 Tbsp. ground pepper
1 Tbsp. ground white pepper
1 tsp. ground nutmeg
1 tsp. ground mace
1 tsp. celery seedPREPARATION:

In a small mixing bowl, mix together all ingredients. Pour into a tightly closed jar and store in a cool, dry place until you are ready to use.

Au Gratin Potatoes

INGREDIENTS:


4 Russet potatoes, sliced into 1/4 inch coins
1 onion, sliced into rings
3 tbsp butter
3 tbsp all purpose flour
1/2 tsp salt
2 cups milk
1 1/2 cup shredded cheese (your choice, a mix of swiss and cheddar is good)
salt and pepper to tastePREPARATION:

Preheat oven to 400 degrees. Butter a 1 quart casserole dish.

Layer 1/2 of the potatoes into the bottom of the prepared casserole dish. Top with onion slices and add the remaining potatoes. Season with salt and pepper to taste.

In a medium sized saucepan, melt butter over medium heat. Mix in the flour and 1/2 tsp salt with a wire whisk, stir for one minute. Stir in the milk. Cook until mixture has thickened. Stir in cheese all at once and continue stirring until melted. (for more flavor, you can add cayenne pepper or worchestershire sauce:)

Pour this mixture over the poatoes and cover with foil.

Bake 1 1/2 hours in the preheated oven. Serve hot :)

Haha I could see that. It's just a cheese biscuit image I grabbed for the recipe.

They are really good with a creamy milk based soup, like broccoli cheese or potato soup.

Stuffed Acorn Squash

INGREDIENTS:

3 med acorn squash
1 chicken boullion
1/3 cup boiling water
1/2 cup chopped onion
1 c crushed herb-seasoned stuffing mix
1 slightly beaten egg or 1/4 cup eggbeaters
4 tbsp butter
1/2 tsp salt
dash of pepperPREPARATION:

Preheat oven to 400 degrees

Cut squash in half lenthwise and remove the seeds (which are good roasted btw). Butter the cut edge and place cut side down on a baking sheet. Bake for 30 minutes or until tender. Scoop squash from the shells (save the shells!) Mash the squash and add the egg.

Dissolve boullion in boiling water, add to the squash. Cook onion in butter until tender, not brown. Stir in stuffing mix with onions. Reseverve 1/4 cup of the stuffing mix. Add the rest to the mashed squash. Add seasonings. This mix will be thin. Put into the shells and top with the reserved stuffing mix. Bake for 25 to 30 minutes.

I made the cheese biscuits. a little dry imo, but then it was pointed out to me that they did taste like biscuits, which are normally dryish. I think I might try again but with more stuff added into the actual dough (garlic whatnots) maybe a bit more milk, and mozerella cheese. and then cut in half with cheese melted onto them.
i like cheese.
